MANIFESTO

Five articles. One dressing. No compromise. This is what happens when a rock band writes the rules for the only salad worth eating.

Van Hale is the legendary co-owner and maître d'hôtel of Anchorage, Alaska's iconic The Marx Bros. Cafe, famous for preparing over 6,000 tableside Caesar salads a year. The restaurant operated for 45 years in downtown Anchorage before closing permanently in August 2024.

THE MANIFESTO

FIVE ARTICLES, NO AMENDMENTS

Romaine is sacred

Cold, crisp, whole leaves. Anything limp gets sent back to the kitchen and possibly the label.

NO BOTTLED DRESSING, EVER

Emulsify it yourself. Olive oil, lemon, balsamic, garlic, anchovy, coddled egg. A jar from the fridge aisle is a cover band, and we don't play covers.

ANCHOVY IS NON-NEGOTIABLE

It's the bassline. You may not hear it directly, but the whole song falls apart without it.

Croutons are handmade

Torn, not cut. Toasted in the same pan as the garlic. Bagged croutons don't tour with us.

Parmesan is grated, not shredded

Cut tableside with a real knife, right over the bowl. A pre-shredded bag doesn't get a stage pass.

Every ingredient earns its spot

Torn sourdough, garlic oil, cast iron heat. Keeps the whole plate on beat.

Grated, never shredded or from a bag. Loud, sharp, out front the whole time.

Anchovy

Mashed into the dressing. You feel it more than you taste it, and that's the point.

Balsamic vinegar

A dark, sweet edge under the lemon. Splits the difference between sharp and rich.

Marx Bros famous, poured slow while the whisk runs. Carries every other note in the dressing.

Coddled egg

One minute in the water, no more. Binds the whole dressing without tasting like an egg at all.

Garlic, three cloves

Crushed with the anchovy into a paste. The low hum underneath everything else.

Lemon

Juiced fresh, right before the whisk. Cuts through the oil and wakes up every other note.

The Tableside Showmanship

  • The Routine: Van or his trained servers prepped the salad completely from scratch right next to the diner's table.
  • The Ingredients: Built in a wooden bowl using garlic mashed into a paste, anchovy fillets, a coddled egg, fresh lemon juice, olive oil, and Parmigiano-Reggiano.

The Legacy: Though the physical restaurant closed after its final service on August 31, 2024, Van's Caesar recipe remains a legendary staple of Alaska culinary history.
